Sweet Potato Pie

2 cups boiled and mashed sweet potatoes

1 1/4 cups sugar

1 tsp. lemon flavoring

1 Tbsp. vanilla flavoring

1/2 tsp. ground cinnamon

1/2 tsp. ground nutmeg

3 eggs (slightly beaten)

1 unbaked pie shell


Preheat oven to 350 degrees F. Mix first seven ingredients well then spoon into unbaked pie shell. Bake for about 1 hour. Let cool before serving. 



Sweet Potato Casserole

3 cups boiled and mashed sweet potatoes

1 cup sugar

2 eggs (slightly beaten)

1 tsp vanilla flavoring

1/2 cup milk


Topping

1/3 cups butter

2/3 cups light brown sugar

1/3 cups flour

1 cup chopped pecans


Combine first five ingredients and mix well. Pour into greased casserole dish. For the topping, cut butter into the sugar and flour until it crumbles. Add chopped pecans. Sprinkle over top of potato mixture. Bake at 350 degrees F for 30 minutes. Can be served hot or cold. 

Sweet Potato Bread

3 cups boiled and mashed sweet potatoes

3 cups flour

3/4 cups oil

2 cups sugar

1 tsp. cinnamon

1 tsp. nutmeg

1/4 tsp. cloves

1 tsp. salt

1 tsp. baking soda

1 tsp. baking powder

3 eggs (slightly beaten)

1 cup chopped pecans


Mix dry ingredients in a separate bowl then the wet ingredients. Combine and mix well. Batter will be thick. Bake in 2 greased and floured loaf pans at 350 degrees F for about 1 hour. Let cool for 10 minutes before removing from loaf pans.
